The upscale Ampersand was an
immediate hit following its opening in late 1998. It's the premier restaurant at the new
Cockle Bay Wharf development on the city side of Darling Harbour. Its team of
world-renowned chefs is lead by Sydney icon Tony Bilson. The food can be stunning and
reflects Bilson's views on using the finest and freshest ingredients. The restaurant
itself is light and contemporary and has sparkling views across the harbor. Sample dishes
include the confit of ocean trout with prawn cannelloni and the spiced duck breast with
quince mousseline.
